Eggplant Bake

Slice eggplant into thick pieces. Put a little salt on each side and let it sit for about 20 min. Wash the eggplant. In a shallow baking pan, grease gently with olive oil. Brush egg white onto eggplant, then coat with Italian bread crumbs (lightly). Cut a thick piece of tomato and place on top of the eggplant. Add a shake or two of parmesan cheese gently on top of the tomato. Add a shake of basil, parmesan, and parsley on top of tomato. Bake in the oven for about 12-15 min at 350.
