Broccoli Chicken-Frittata
Ingredients
- 6 OZ BONELESS CHICKEN-SKINLESS COOKED AND FINELY DICED
- 1 CUP BROCCOLI FINELY CHOPPED
- 2 CUPS EGG SUBSTITUTE
- 1 CUP RED PEPPERS DICED
- 1/4 CUP ONIONS DICED
- 1/3 CUP REDUCED FAT CHEDDAR CHEESE GRATED
- 1/4 tsp thyme and oregano dried
- 1/8 tsp black pepper
- 2 tsp margin

- in large skillet, heat margarine over med heat until melted, add broccoli, red pepper, chicken, onion, thyme, oregano, and black pepper. sautéing until vegetables are tender and chicken is heated through approx. 5-6 min sprinkle grated cheddar evenly over surface of vegetable mixture pour egg substitute evenly over all ingredients cover and cook for 8-10 minutes or until firm cut into four wedges and serve
