Cook the pasta according to the package directions, omitting the salt and fat. Place the spinach in a colander; drain the pasta over the spinach.
Meanwhile, combine the flour, salt and 1/4 teaspoon pepper in a large saucepan; gradually add the milk, stirring with a whisk until blended. Cook over medium until thick, stirring frequently, about 8 minutes. Remove the pan from the heat. Add the cheeses and butter, stirring until the cheeses and butter melt.
Add the cooked pasta, spinach, and chicken to the cheese mixture. Toss gently to coat; sprinkle with additional black pepper, if desired, and serve immediately.
