Combine 4 cups fat free chicken stock, 1/2 small chopped onion, 2 chopped cloves garlic, and 3 small chopped Zucchini (Skin on) in medium pot on medium heat. After boil lower heat and cover and simmer for about 20 minutes. Remove from heat and add 2 Tbsp light or fat free sour cream and purée with immersion blender til smooth. Salt and pepper to taste. I topped with fresh grated Parmesan. I often use a whole onion and elephant garlic instead of regular garlic ???? really healty!
