  1. In a large skillet using 1tablespoon of olive oil on medium -high heat , Cook chicken , stirring frequently for 10 minutes or until pink is gone . In a pot spray cooking spray and place chopped onion cooking 6 minutes, on medium heat or until soft. Place pepper, oregano, cumin and coriander , stirring for 1 minute. Place in chicken and chilis , stirring till mixed about 3 minutes. Pour in the chicken stock. Let simmer 15-30 minutes. Add cilantro or parsley a few minutes before serving . Ladle 1 cup chili in a bowl, adding 2Tablespoons of Monterey Jack and sour cream to each 1 Cup bowl. . 233 calories per 1cup bowl. Sour cream is an additional 30 calories.
