  1. chop up hard boiled eggs and place in bowl add in sun dried tomatoes red onion cucumber and olives stir in greek yogurt lemon juice and spices until well combined.
  2. Serve over lettuce wraps or whole wheat pita bread. Leftovers can be kept in fridge for up to a week.
