Mediterranean Egg Salad
Ingredients
- 8 large eggs hardboiled
- 1/2 cup sundried tomatoes drained and chopped
- 1/2 cup red onion chopped finely
- 1/2 med cucumber chopped
- 1/4 cup olives chopped
- 1/2 cup greek yogurt plain
- 1 1/2 tsp oregano
- 1/4 tsp Cumin
- 1/2 tsp sea salt
- black peper freshly ground to taste
- lemon juice splash
Servings: 1/4 of the recipe

- chop up hard boiled eggs and place in bowl add in sun dried tomatoes red onion cucumber and olives stir in greek yogurt lemon juice and spices until well combined.
- Serve over lettuce wraps or whole wheat pita bread. Leftovers can be kept in fridge for up to a week.
