My entire family LOVES this dish! This delicious pasta dish is loaded with lots of healthy vegetables and tastes great with 1/2 cup Glen Muir Organic Pasta Sauce, served cold on a bed of salad greens, or just as is.

Instructions
  1. Cook pasta according to package instructions. Add broccoli florets the last 2 minutes of cooking pasta. Drain well and transfer to a large bowl.
  2. In a frying pan, add olive oil, garlic, and onion. Saute for 2 minutes stirring occasionally. Add sliced zucchini and saute another 2 minutes.
  3. Add chicken broth, oregano and red pepper flakes and cook for 1 minute. Reduce heat to medium and add tomatoes. Cook 5 minutes, stirring frequently.
  4. Stir in spinach and lemon rind; cook covered for 2 minutes or until spinach is tender.
  5. When done, add cooked mixture to pasta/broccoli and toss to coat well.
  6. Season to taste with salt and pepper. Sprinkle with parmesan.
