Dice/chop the onion and garlic in olive oil until tender
core tomatoes and remove peels, blanch in boiling water for 10 seconds
Add 3 cups of water and chicken broth, tomatoes, vinegar and sugar.
Bring to boil then reduce and simmer for 30 minutes.
Finely chop basil and oregano and add to pan
season with salt and pepper
