For the vegetables heat 2 tablespoons of oil in a large skillet over medium heat. Add carrots , garlic and onions cook, about a minute. Then add broccoli and cook an additional minute. Add the bell peppers and cook 1 more minute. Add the mushrooms , zucchini , and squash till softened.
We used a jar of purchased sauce. When vegetables are done , pour 1 cup of sauce over vegetables and heat. Before serving sprinkle the Parmasean cheese over the veggies and sauce.
