In a large skillet over medium heat, warm the oil. Add the garlic and cook for 30 seconds. Add the zucchini and toss to mix. Add tomato and oregano. Toss well to mix. Reduce heat to medium-low. Cover and cook for 5 mins to soften zucchini.
Add the salt and pepper and stir gently to mix.
If desired, sprinkle with grated parmesan cheese
